Ok, this is pretty easy. You’ll need a pound of tomatoes, I used the San Marzano from last week’s basket. You’ll need half an onion and some garlic. I used five cloves. I also used about 1/4 cup of olive juice. You could also use chicken broth, artichoke juice, red wine or water.
I started with a pound of San Marzano tomatoes in a pot.
I trimmed off the tops, added enough water to cover the bottom and turned the stove on medium-high for 15 minutes.
Cut up the tomatoes. Add a little more water if it all evaporates.
Add half an onion and garlic as you like — I added 5 cloves.
Next, I added about 1/4 cup of olive juice from this can of olives. I’ve also used the liquid in an artichoke jar, red wine, chicken broth and water. Take your pick! Something with flavor is better than the water.
Ok, separate any onion layers so they’re in the liquid. Cook on medium-high for another 15 minutes.
Blend with an immersion blender. Food processors can be used, though they are a bit messy. You could also pour the mixture into a regular blender for a smooth sauce.
Finish off with a little extra fat, like a pat of butter or a few drizzles of olive oil. I prefer butter. Taste and adjust as need be. You can use on pasta or a homemade pizza!
I made the sauce and my boyfriend used it on this tasty pizza.
Finished off the pizza with kimchi and bacon. Baked in the oven for another 15 minutes.
